I don't have time to think too much into this at the moment, but here's some off the top of my head...
PASSING - Throwing on the run, pump fake, play action, audible(?)
RUSHING -
BLOCKING
RECEIVING - Leaping catch(?)
COVERAGE
TACKLING - Maybe something like solo and assisted? As in how good the defender is at making one-on-one tackles vs. having a part in gang tackles?
OFF AWARENESS and DEF AWARENESS - Play recognition, penalty avoidance(?)
KICKING
PUNTING
Blocking height/leverage would be one. Every coach I've ever had on either side of the ball always says low man wins and one of their top phrases to preach to us.
Base could also be one for blocking although that might go in with footwork depending on how broad you want to make footwork.
Hips or explosion could also go into it. The main ingredient in pancakes and great blocks. Once you roll your hips into a defender with power (Adding in hands and leverage) you have complete control.
I might be getting too much into specific trench fight battles though.
For awareness something like know your opponent. So if you know the opposing DE likes to swim a ton you can better defend against it. If you know an opposing RB uses a lot of head fakes you can know to not commit so much when they look one way.

I think the ability to Play Action is something that should be considered, cos some guys are noticeably better than others.
I dont know quite how you would do it, but deception as a whole is worth considering. I mean to cover things like pump fakes, play action, a WR faking one way going the other, maybe stop routes, flea flickers, RB ability to sell the PA, sell staying to block but running out in the flat, the classic fall down get back up and run your route...All things like that which are minor in themselves, but if you could somehow incorporate them under one ability...It might be worth considering...

For Madden people the best way to explain it is that he has a very low awareness.
Hmm, I dunno, I guess that would be a confidence thing, having the confidence to know you are gonna get hit when you catch the ball and NOT drop it.
