Maybe because they are Atts not Stats
I think you hit the nail on the head to be honest. EA have added more atts for realism and a fuller game, but have instead clogged it by not working them in unison with the older atts in place. I dont have this years game, so I cant tell you the affect.
However what I can tell you is that some attributes have a massive impact...Like Speed and Acceleration (stuff it is easy to measure) as does Awareness, but that is hard to measure.
Myself, when I am assessing a player, I look at specific aspects I like a player to have, rather than the OVR (though obviously, if that contributes to a higher OVR, thats all the better as they are a more well rounded player). So for me, Im **** hot on things like Speed and Acceleration, and to an extent is certain positions, strength.
One thing that was the case in older games though is that they did not account for height and weight. Im not sure if this has been corrected, but except for the fact a player can literally reach higher, they did not account for those two when in the trenches for example.
If I could be more help on the newer atts, I would.
As for your point about excitement over atts. That's just a case of pride in the case of favourite players, and the fact if we are measuring things, how good a player is as a whole is something we as street walking coaches can do, or think we can do in some cases.
